Egg size substitution
Most recipes assume large eggs, but fridges hold whatever the shop had. The trick to swapping sizes is to match total egg volume rather than the number of eggs — average shelled weights run from about 38g (small) to 63g (jumbo).
Set the size the recipe wants, the size you actually have, and the count, and this tool tells you how many to use. For four or more eggs the difference matters most; beat and weigh the egg if a recipe needs precision.
